Essex County Jail cooks need test

LEWIS -- The cooks have to be put to work.

Since the State Commission of Correction required the cooks to be hired and trained before the new Essex County Jail in Lewis opens next month, Sheriff Henry Hommes had to find someone for them to cook for.

"We're now preparing meals for our inmates here in the (modular) County Jail," Hommes said.

The county has a 21-cot modular jail it has been using since the old jail was ordered closed three years ago.

"They're requiring the cooks to be up to the level (they would be) when inmates are in the jail," County Manager Clifford Donaldson Jr. said.

He said a department head and Board of Supervisors lunch meeting will be held at the jail soon.

"Mr. Donaldson said we're guinea pigs," Supervisor Joyce Morency (R-St. Armand) said.
