Agri-tourism cluster sprouts new growth

CHESTERFIELD — A new generation of young farmers is working to create an agri-tourism cluster along a short stretch of Mace Chasm Road with the assistance of the Adirondack North Country Association.

Mace Chasm Farm, North Country Creamery at Clover Mead Farm and AuSable Brewing Company are all located within about one mile of each other. Each is in the midst of new projects to highlight the availability of high-quality, home-grown products in the North Country.

Courtney Grimes-Sutton and Asa Thomas-Train are in their second year at Mace Chasm Farm, located at 810 Mace Chasm Road. Grimes-Sutton said it is rewarding to be part of the agri-tourims movement.

They are opening a butcher shop on the premises, with one side dedicated to beef, lamb and pork and the other to chicken. The shop falls under the jurisdiction of the New York State Department of Agriculture and Markets.

Grimes-Sutton said they plan to have a butcher on site Tuesday through Thursday with fresh meats available on “Fresh Cut Thursdays.”

“Our products will be super fresh,” she said, adding they also plan to sell some at local markets.

They have also refurbished a food truck, complete with pizza ovens. They plan to cover at least three local farmers markets as well as special events.

Grimes-Sutton said they have about 100 sheep, 20 cows, 40 piglets, five sows and a boar on about 125 acres, half open fields and half forested. They recently moved their largest herd of pigs into one wooded area and eventually would like to do the same with the cows and sheep.

She said that allowing the animals to graze wooded areas allows them access to shade and protection from the wind.

There is a nice stream that runs right through the farm, as well as a hedge line that transitions to fruit and nut trees that provide additional nutrition for their animals as well as local wildlife.
