Sentinel Grille opens with steak and seafood menu


TICONDEROGA — The Sentinel Grille’s new owners have renovated it in the motif of Ticonderoga High School’s purple and white colors.

The restaurant on the Hague Road (872 State Route 9N) in Ticonderoga is holding its grand opening at 5 p.m. Wednesday, Jan. 30, with an inclement weather date of Jan. 31.

The place, formerly called The Carillon and Tierney’s Restaurant, is now owned by Sharon and Gary Cooke of Port Henry. The chef is still Donald Barber, who worked for the previous two owners.


“It’s an American grill theme, with a steakhouse menu,” Mr. Cooke said. “We have a variety of entrees, with steaks, poultry and fish and vegetarian and gluten-free dishes.”

They will also offer lighter fare and a children’s menu. In addition to the house specials, the Sentinel Grille will feature fresh house-baked bread and desserts.


Using the Ticonderoga school colors has been popular with diners, Mr. Cooke said.

“People come in and talk about their high-school memories. It’s a nice thing. We’ll be featuring team photos and sports photos from the past.”

They’ve also moved partitions around so the bar on one side is separated from the main dining room.

“It’s not loud in the dining room now,” Mr. Cooke said. “You can relax and enjoy your meal.”


The reopening was Jan. 5, he said, with a soft opening Jan. 4 that more than 60 people attended.

On a recent Saturday, 80 people came in for dinner, he said.

“The response and the feedback have been overwhelming. A good group of people are coming in. We’ve been busy.”


The public is invited for the grand opening, which includes a Ticonderoga Area Chamber of Commerce ribbon-cutting with light refreshments afterward.

A special offer for gift certificates will be to receive a $50 certificate for $40 between the hours of 5:15 and 6:15 p.m. only on grand opening day, limited to two per person.

The Sentinel Grille will be open for dinners Tuesday through Sunday, 4:30 p.m. to 10 p.m.

The Sentinel Grille will offer a Community Give-Back Program each month to help a local charity or community need, with a focus on youth and family.

The program will donate a portion of the restaurant’s net profits, with some restrictions, to some entity each month.

The charity for January is the Ticonderoga Central School Booster Club, followed by St. Mary’s Catholic School in Ticonderoga for February.

The Carillion was a landmark local restaurant that served excellent food, and the Cookes say they intend to hit that mark.

“Our goal is good products at affordable prices,” Mrs. Cooke said. “We are now in full swing. We’re offering nightly specials, reasonable prices and, shortly, a wine list.

“We also plan on opening for lunch starting this summer.”
